AMERICAN PANCAKES BY ELIAS (THE FINNISH GUY)
5 dl wheat flour (a little less is okay but absolutely no more than exactly 5 dl)
3 teaspoons (15 ml) baking powder
1 teaspoon (5ml) vanilla sugar
Half a teaspoon (2-3ml) salt
1,5 dl oat milk (I’ve used rainbow brand, iKaffe would work well too)
2 dl (200g) sour cream (kermaviili), at least q10% fat (I don’t have yet any good vegan alternative for this, but there are at least lactose free brands…)
3 normal size eggs (again no good vegan alternative that I had tried yet)
3 tablespoons (45-50ml) demerara sugar (fariinisokeri)
0,5 dl melted butter or margarine or oil, each give a bit different taste to the final product
- Mix the wheat flour, baking powder, vanilla sugar and salt in one container
- Mix the oat milk and sour cream in a second container
- Whip the eggs and demerara sugar into a fluffy foam in a third container
- Melt the butter (again in a separate container…)
- Add the flourmix and milk/sourcreammix carefully in turns to the foam, mix it up well but not too hard. Try to keep it even without the flour forming any lumps.
- Finally add the melted butter to the dough and mix it up good
- Fry the pancakes on a pan with butter or oil (a little less than 1 dl of dough for one pancake)
- Enjoy with butter, syrup, berries, powdered sugar or salty toppings
